No-Bake Almond Joy Cookies

When I first started the Paleo diet (or lifestyle as I prefer to call it), figuring out what snacks I was going to eat was hard for me. Almonds were my go-to snack, fruit was an option most of the times as well as a bagful of baby carrots, but I got sick of them early on and at the time, I thought my options were limited. I know better now, but I am sure a good amount of you might find yourself in the same situation I was in. This is one of the many snack recipes I will post so you won’t be deprived of food in the middle of the work day!

This is probably one of the easiest Paleo snacks you can make – No-Bake Almond Joy Cookies. I came across this recipe last week and have not made it yet, but another Paleo Chocolate Chip cookie recipe I have made it in the past has the same ingredients (except it includes eggs) and they are some of the best cc cookies I’ve had. No eggs, in cookies? That’s right, you don’t have to even turn on the oven for these sweet snacks.

No-Bake-Almond-Joy-CookiesIngredients:

1/2 cup almond flour
1/2 cup unsweetened shredded coconut
1/2 cup coconut butter (not coconut oil)
1/4 cup honey
1/2 cup chocolate chips
1/2 tsp vanilla extract
1/4 tsp sea salt
1/8 tsp almond extract (optional)

Directions:

Combine all ingredients in a bowl (or food processor) and mix well until completely combined. Form batter into 2-inch balls and place on wax paper. Flatten balls with the palm of your hand. Allow cookies to chill in the refrigerator for at least 60 minutes before serving.
