          1. WHAT BROUGHT YOU TO CROSSFIT RENAISSANCE? Over the years, I had watched the CrossFit Games many times. I’d think to myself, how could these women put two times their bodyweight over their head? How could they run for so long and then do 50 pull-ups when I couldn’t even do a […]

  • Nutrition Plan Success Stories

By Bill | In Blog, Nutrition | on December 1, 2014

“It’s not how much you work out…it’s what you eat…really?  October 2014 was my first figure competition and a very different nutritional journey.  I met with Bill regularly during the pre-competition process.  He said (I’m paraphrasing here, in a Moses at the burning bush voice) “Your diet is 80% of your results.”  At that time […]

By Bill | In Blog, Nutrition | on October 30, 2013

Howdy everyone. After a long delay, the blog is back and I have quite a bit of catching to do. I might have said this in a few posts about various dinner recipes, but I REALLY mean it this time when I say Taco Pie one is probably my favorite Paleo meals to make for […]

  • Paleo Chocolate Chip Cookies

By Bill | In Blog, Nutrition | on October 11, 2013

I first want to thank Bill & Joyce for putting holding Beat The Streets last Saturday. It was a great team effort – organizing the team WODs and bringing in Walter & Aaron from Hero. They taught us about sustainable food and how to break down a chicken and fish! Videos on how to break them down hopefully […]

  • Sweet Potato Chai Muffins

By Bill | In Blog, Nutrition | on October 3, 2013

Muffins are perfect anytime of day, especially for breakfast on the go, a mid-morning snack or a before and/or after a CrossFit workout. Sweet potato muffins were my go-to snack and a quick bite before a workout for quite awhile and I even had a tradition with my friends of making them the day before […]

  • Pumpkin Pie Smoothie

By Bill | In Blog, Nutrition | on October 2, 2013

Happy October! I don’t know about all of you, but a ridiculous amount of people coming up on my Facebook news feed were posting pumpkin statuses and pictures left and right – pumpkin coffee, lattes, muffins, cookies, BEER….in the first week of September!! Too early for the pumpkin craze. Now that’s it’s officially October (and […]

  • No-Bake Almond Joy Cookies

By Bill | In Blog, Nutrition | on September 29, 2013

This is probably one of the easiest Paleo snacks you can make – No-Bake Almond Joy Cookies. I came across this recipe last week and have not made it yet, but another Paleo Chocolate Chip cookie recipe I have made it in the past has the same ingredients and is only missing the eggs and they are some of the best cc cookies I’ve had. No eggs, in cookies? That’s right, you don’t have to even turn on the oven for these sweet snacks.

    1/2 cup almond flour
    1/2 cup unsweetened shredded coconut
1/2 cup coconut butter (not coconut oil)
    1/4 cup honey
    1/2 cup chocolate chips
    1/2 tsp vanilla extract
    1/4 tsp sea salt
    1/8 tsp almond extract (optional)
