This is probably one of the easiest Paleo snacks you can make – No-Bake Almond Joy Cookies. I came across this recipe last week and have not made it yet, but another Paleo Chocolate Chip cookie recipe I have made it in the past has the same ingredients and is only missing the eggs and they are some of the best cc cookies I’ve had. No eggs, in cookies? That’s right, you don’t have to even turn on the oven for these sweet snacks.

Ingredients:

1/2 cup almond flour
1/2 cup unsweetened shredded coconut
1/2 cup coconut butter (not coconut oil)
1/4 cup honey
1/2 cup chocolate chips
1/2 tsp vanilla extract
1/4 tsp sea salt
1/8 tsp almond extract (optional)
