With the Paleo 30-Day Challenge only four days away, we will be posting recipes almost everyday to get you more motivated to jump on the Paleo bandwagon. Whether you are starting Paleo for the first time, or going back to it after a hiatus (like me, unfortunately), these recipes won’t include 30 ingredients and 30 steps like some Paleo recipes call for which push some people away. The majority of our recipes will be as simple as possible so you have the time to make these, even after a busy day of work and crossfiting!
The first recipe, Paleo Meatballs, is from none other than Bill & Joyce. As you can see in the ingredient list, there’s not much to it. I bet the basil gives them a fresh flavor and the cumin must give them a little kick.
Prep time is 10 minutes, cook time is 20-25 minutes and makes approx. 35-40 meatballs. Another great thing about this recipe…plenty of leftovers for lunches and/or dinners!
Ingredients
- 2 lbs grass-fed ground beef
- 3/4 cup almond meal/almond flour
- 3 tablespoons Chopped onion (dried or fresh)
- 1/4 cup Coconut Aminos
- 1 tablespoon Garlic Powder
- 1 tablespoon Basil
- 1 tablespoon Cumin
- 1 teaspoon Sea Salt
- 1 teaspoon Black Pepper
Step 1: Put all of the above ingredients into a glass bowl.
Step 2: Mix together with your hands until everything is combined.
Step 3: Roll mixture into small balls and place onto aluminum foil or parchment paper lined baking sheet.
Step 4: Bake at 400 degrees for 20 minutes or until meatballs are cooked through.

The final product! Can’t much easier than that.
Here’s the second recipe for Joyce’s Homemade Tomato Sauce. Don’t let some of the ingredients “scare” you away. Beef bouillon cubes are very cheap, and adobo seasoning and curry powder are things you will use for other Paleo recipes.
1 onion chopped small
4 tomatoes chopped small
1/2 cup chopped cilantro
Adobo 2 tbsp
Beef bouillon
1 tsp curry powder
Salt to taste
Chilli powder (optional)
1/2 cup olive oil
1 tbsp minced garlic
Combine chopped onion, garlic in olive oil over medium high heat until browned
Mix all seasoning in bowl with 1 cup water.
Add tomato, cilantro and seasoning to pot.
Stir and let simmer on low for 10 minutes.
Taste and add salt if needed.
Cook to desired texture. Add more water if desired.
What do you pair meatballs and sauce with with? No, not pasta…the better alternative, Spaghetti Squash! The best part of this recipe? You don’t need a stove top or an oven, it’s all done in the microwave. Yep, you read that right. I found this super easy recipe on Nom Nom Paleo. She has great recipes and I will probably be posting quite a few of hers on future blog posts.
